Enchilada rice

You know those times when you don't have much in the larder but you need to eat, which for me is almost always, you have to be creative. So I combined my yellow rice with some enchilada sauce and this dish was really tasty. If I had had some plant-based meat, some black olives or green chilies and some sour cream, with a bit of cheese, I would have really been on to something! To me, happiness is a full fridge and larder so here's to happiness!
